This 7,000 SF, $2.3 million project received a complete infrastructure makeover of its mechanical, electrical and plumbing systems. The small footprint of this restaurant dictated an unconventional amount of heavy kitchen equipment located in such tight quarters, including six vented range hoods, a wood-fired pizza oven, commercial-grade deep fryers, grills and griddles and three walk-in coolers.
The project involved a 100 percent gut renovation of the kitchen to add all new equipment and create a more open feel to the kitchen area. Additional work included complete replacement of the underground and above ground plumbing systems including replacing the 500 gallon grease trap with a new 1,500 gallon unit. The existing electrical room had to be reconfigured to meet current code requirements that also forced the relocation of a structural cast iron column supporting 4 floors of a load-bearing masonry wall.
Crumb Engineering worked with Dillas Restaurants through Vintage Design Group extensively on the design of the prototype for the Dillas restaurant chain. We worked closely with executives and design staff to assist the company in understanding where they were taking their brand. The Crumb Engineering team was innovative in anticipating their needs and helping them achieve their goals.

The building is constructed of a wood frame with masonry veneer an the project features reclaimed wood wall cladding on the interior, Italian interior flooring, exposed decorative roof trusses, exterior tile, Aircraft contemporary brick, rough swan cedar trellis and a double drive thru canopy. Crumb Engineering is very proud to perform the HVAC, mechanical, electrical and plumbing design work for this rapidly expanding brand.
